2 tbsp olive oil, 1 tsp vinegar, 1 tsp honey, 1 tsp mustard sauce, ¼ tsp chilli flakes, 1 cup rocket leaves, ¼ cup quinoa, 1 bell pepper, 1 cup watermelon, 1 tsp pumpkin seeds, 4 cashews and salt as per taste.
In a bowl, add olive oil, vinegar, honey, mustard sauce, red chilli flakes and salt as per taste. Whisk well to make a salad dressing. Set it aside.
Now boil 1 cup of water in a pot. Add quinoa and simmer it for 10 minutes. Add a little bit of salt while cooking it. Once puffed up, drain excess water and collect the cooked quinoa in a bowl.
Roast the bell pepper directly on the flame and then cut it into cubes. You can also saute diced bell peppers in a pan.
Use a fruit scooper or a measuring spoon to scoop out watermelon balls.
Now add rocket leaves, boiled quinoa, roasted bell peppers and watermelon balls to a bowl. Give a mix. Pour the salad dressing over it and again toss well.
Lastly, garnish the salad with pumpkin seeds and broken cashew nuts.
Your Superfood Salad is now ready to be served. Enjoy!
