Here is Virat Kohli’s favourite Superfood Salad recipe that is also a part of the menu of his restaurant in Delhi named One8 Commune. Tap for the recipe.

Ingredients required

2 tbsp olive oil, 1 tsp vinegar, 1 tsp honey, 1 tsp mustard sauce, ¼ tsp chilli flakes, 1 cup rocket leaves, ¼ cup quinoa, 1 bell pepper, 1 cup watermelon, 1 tsp pumpkin seeds, 4 cashews and salt as per taste.

​Step 1

In a bowl, add olive oil, vinegar, honey, mustard sauce, red chilli flakes and salt as per taste. Whisk well to make a salad dressing. Set it aside.

Step 2

​Now boil 1 cup of water in a pot. Add quinoa and simmer it for 10 minutes. Add a little bit of salt while cooking it. Once puffed up, drain excess water and collect the cooked quinoa in a bowl.

Step 3

Roast the bell pepper directly on the flame and then cut it into cubes. You can also saute diced bell peppers in a pan.

​Step 4

Use a fruit scooper or a measuring spoon to scoop out watermelon balls.

Step 5

Now add rocket leaves, boiled quinoa, roasted bell peppers and watermelon balls to a bowl. Give a mix. Pour the salad dressing over it and again toss well.

Step 6

Lastly, garnish the salad with pumpkin seeds and broken cashew nuts.
